Here's how it works step-by-step!
Just follow the instructions below and take your commercial kitchen to the next level!
-
1. THAWING
Leave the patties to thaw overnight on a tray in the refrigerator.
-
2. SMASH
Place the patties on the griddle (smash them, and only sear one side). Only "smash" one side. The other side of the patty remains raw.
-
3. LAY OUT
Flip the smashed burger and place it on trays for the combi-steamer, with the raw side facing down.
-
4. TOP
Top the seared side with cheese and onions.
-
5. STACK
Place a second, smashed patty (seared side up) on top of the first topped patty. Prepare as many trays as needed and store them in a cool place until the first guests arrive for lunch.
-
6. COMBI-STEAMING
Shortly before serving, heat the trays with the topped patties in the combi-steamer at 120 degrees Celsius with hot air for about 10 minutes to cook the unseared sides of the patties. (Time and temperature may vary depending on equipment)
-
7. BRUSH
Spread the ketchup-mustard mixture on both inner sides of the burger buns.
-
8. PLATE
Place the cooked patties on the prepared buns.
-
9. SERV
Serve the smash burger with a side dish (e.g., fries). Enjoy your meal!
