Especially in institutional catering, where large quantities of meals have to be produced efficiently every day, one doesn't immediately think of smash burgers – wrongly so! Because with the right step-by-step instructions, our smash burgers can also be prepared effortlessly and time-savingly in larger quantities.
Ideal for bringing a breath of fresh air and genuine enthusiasm to the menu – without complicating kitchen processes or increasing effort. Try it out!

1. THAW
Let patties thaw overnight on a GN tray in the refrigerator.

2. SMASH
Place patties on griddle (smash, and fry only on one side). "Smash" only one side. The other side of the patty remains raw.

3. TOP
Flip smashed burger and place on trays for the combi steamer, with the raw side down. Top the fried side with cheese and onions.

4. DOUBLE
Place a second, one-side smashed patty (fried side up) on top of the topped patty. Prepare as many trays as needed and store them chilled until the first guests arrive for lunch.

5. COMBI-STEAMING
Shortly before serving, heat the trays with the topped patties according to the number of guests at 120 degrees for about 10 minutes with hot air in the combi steamer to cook the not yet seared sides of the patties. (Variations in time and temperature possible depending on equipment).

6. SPREAD
Spread buns with the ketchup-mustard mixture on both inside halves of the burger bun.

7. PLACE
Place cooked patties on the prepared buns.

8. SERV
Serve Smash Burger with side dish (e.g., fries). Enjoy your meal!
