Air frying in a combi oven

Crispy results without a traditional deep fryer!

No room for an additional deep fryer? Or are you looking for a flexible way to prepare fries, finger food and breaded products directly in your existing combi oven?

Then air frying in a combi oven can be an interesting alternative. With intense hot air, targeted dehumidification and the right accessories, many pre-fried products can be browned evenly and prepared with a crispy finish.

It is important to put this into perspective: strictly speaking, a combi oven does not fry food in the traditional sense. Instead of cooking in hot oil, the products are cooked by a powerful, dry flow of air. For suitable products, however, the result can come very close to preparation in a deep fryer.

Why air-fry in a combi oven?

In professional kitchens, the cooking result is not the only thing that counts. Space, safety and standardised processes also determine whether a preparation method works in everyday operations.

    Less space required

An additional deep fryer requires floor or counter space, a suitable connection and, depending on the kitchen, an appropriate extraction solution. If a powerful combi oven is already available, it can be used for more applications - from baking and steaming to preparing crispy snacks.

Less effort related to frying oil

Without an open oil bath, many typical tasks are eliminated: oil does not have to be stored, filtered, monitored and disposed of in the same quantities. This reduces handling in day-to-day kitchen operations and can be particularly attractive for businesses that only offer fried products at certain times or in smaller quantities.

    Reproducible results

Saved programmes help standardise cooking times and browning levels. This enables the team to work reliably even when staffing changes, without having to judge every batch from scratch.

    Greater menu flexibility

Finger food, schnitzel, breaded burger components or vegetarian alternatives can be added without a separate frying station. This opens up new possibilities for snack menus, promotional offers, food-to-go and smaller kitchen concepts.

Which combi ovens are suitable for air frying?

However, the principle is not limited to one manufacturer. Different solutions are available depending on the appliance and its equipment:

    • For pre-fried products, the RATIONAL iCombi Pro uses the perforated CombiFry. The accessory is designed to allow hot air to circulate around the food as freely as possible. (RATIONAL)

    • Convotherm offers a dedicated AirFry mode for the mini pro, combined with enhanced air circulation and rapid dehumidification. (Convotherm)

    • MKN offers special frying baskets as accessories for the FlexiCombi, among other solutions. (MKN)

    • UNOX uses high air performance and active moisture removal in the CHEFTOP-X to create dry, even conditions inside the cooking chamber. (UNOX)

    • Electrolux Professional uses OptiFlow air circulation and precise climate control in its SkyLine combi oven. (Electrolux Professional)

Programme names and the required accessories vary from manufacturer to manufacturer. The appliance manufacturer’s recommendations and the product preparation instructions should therefore always be followed.

Our products in the combi oven test

Which Salomon FoodWorld products are suitable for preparation in a combi oven? We tested them using the RATIONAL iCombi Pro.

The documented values show the cooking times, programmes, browning levels and containers used. They provide practical, tested starting values.

Adjustments may be necessary depending on the appliance size, load quantity, starting temperature and desired degree of browning.

    Conclusion

Can the combi oven completely replace the deep fryer?

Not in every operation and not for every product.

For pre-fried frozen products, breaded snacks and small to medium production volumes, the combi oven can be a very good alternative. Businesses that continuously produce large quantities, fry fresh doughs or need to cook products completely in oil will often still require a traditional deep fryer.

The key question is therefore not “combi oven or deep fryer?”, but:

Which technology delivers the best result for my product range, volumes and kitchen processes?

A combination can also make sense: standard products are prepared in the combi oven, while the deep fryer is used only for applications where an oil bath is technologically or sensorially necessary.

At Salomon FoodWorld, we already ensure during the development of our foodservice products that they are suitable for everyday operations and the conditions of the hospitality industry.

    8 tips for crispy results

    1. Use the right accessories

A perforated frying basket or comparable AirFry accessory improves air circulation. On a solid tray, escaping moisture cannot dissipate as easily, so the underside is more likely to remain soft.

However, the best support depends on the product. The test shows, for example, that some schnitzel products were also tested on a non-perforated baking tray or in a shallow GN container.

    2. Preheat the combi oven completely

Do not load the cooking chamber until the required temperature and the correct climate have been reached. An appliance that is not fully preheated extends the cooking time and can cause the breading to absorb moisture before it begins to brown.

    3. Limit the load

The optimal quantity depends on the product. If the basket is too full, the hot air can no longer circulate sufficiently between the products. This leads to uneven browning and soft contact points.

    4. Arrange products loosely

Arrange snacks or breaded products in as even a layer as possible. Products that overlap heavily or stick together shield each other from the hot air.

    5. Select suitable products

The following often work particularly reliably:

    • pre-fried frozen products

    • breaded chicken products

    • wedges and fries

    • pre-cooked schnitzel

    • products developed specifically for hot-air or oven preparation

Not every product that works in a deep fryer will automatically achieve the same result in a combi oven. With cheese products, the result also depends on the breading, as they can burst quickly.

    6. Create consistent starting conditions

Use the same starting temperature, load quantity and product distribution for every batch. If one batch is loaded frozen and the next partially thawed, cooking time and browning can differ significantly.

    7. Save cooking programmes

Once the time, browning level and load have been established, save the settings as a dedicated product programme. If possible, add a product image and a brief indication of the maximum load.

This allows the team to see immediately:

    • which accessory is required,

    • how much product may be loaded,

    • which programme must be started,

    • what the desired final result should look like.

    8. Do not hold crispy products in closed containers

After preparation, excess steam should be able to escape. In closed containers, the breading quickly becomes soft due to its own moisture. Produce as close as possible to the time of ordering or use a suitable dry holding concept.
